This is a trio made in heaven. The tomatoes, mozzarella and herbs blend perfectly, but for those of you who like a slight kick in your salad, we have the solution at hand. We add flavor to the mozzarella to allow a tangy touch to this classic. A beautiful choice of appetizer or side dish, the look of this is just as attractive as its taste. To avoid compromising on the look, we prefer golden vinegar as opposed to the black one. Follow our recipe to the tee and create this concoction just for your kitchen.
PREP: 45 mins
¼ cup olive oil
¼ cup fresh basil (roughly chopped)
2 cups cherry tomatoes
1 cup mint leaves
½ kg mozzarella (small balls)
Salt and pepper to taste
3 tablespoons balsamic vinegar (golden)
LETS COOK IT UP!
Mix the oil and basil in a bowl together. Now, add in the mozzarella and cover for 30 mins in the refrigerator.
Remove, uncover and add in the vinegar, tomatoes and salt and pepper to taste.
Garnish with fresh mint and serve cold.
