PREP 30 mins

4 pieces boneless chicken breast pieces
2 eggs
1 cup all purpose flour
2 cups bread crumbs
1 tablespoon mustard
2 tablespoon oil
2 tablespoons butter
Handful of fresh parsley
Salt and pepper to taste
4 lemon wedges

First, sprinkle salt and pepper on each chicken breast and set aside. On one plate, pour out the flour. In a wide bowl, beat the eggs and mix in the mustard. Now, in a second plate, pour out the bread crumbs.

Taking one chicken breast at a time, first cover in the flour, then dip into egg mix, and finally coat evenly with bread crumbs. Repeat with each breast piece and place in a clean new tray. Now, heat the oil and butter in a pan and cook the chicken breasts (2 at a time) until they turn golden brown. Once cooked, place on a sheet covered with paper towels to remove excess oil. Add salt for taste. Garnish with fresh parsley and lemon wedges.
