BEEF FAJITAS

Sometimes, all you need to satisfy that belly is sizzling meat on a platter. The flaming aroma of beef cooked with onion, garlic and chilli has an uncanny ability to immediately build appetite. Don’t think you need to go to a restaurant to savour this meal. Beef Fajitas can now be a part of your kitchen menu. Its flavoured meat served on a platter, its tortillas that are used as the roll, and there are vegetables that offer a deliciously colourful accessory to the meal. We show you how to make the beef extra juicy, hence extra yummy. PREP 1 hour

SERVES 6

INGREDIENTS

1/4 cup fresh lime juice
1/4 cup tequila
4 cloves minced garlic
6 large flour tortilla
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 large onion
Lime wedges
2 tablespoons cilantro leaves
2 tablespoons vegetable oil
2 teaspoons Worcestershire sauce
1 teaspoon oregano seasoning
1 teaspoon red pepper flakes
1 teaspoon ground cumin
1 teaspoon ground coriander
2 pounds steak
2 teaspoons salt
1 teaspoon ground black pepper

LETS COOK IT UP!

Take a bowl and mix the lime juice, tequila, minced garlic, chopped cilantro, 1 tablespoon of the oil, the Worcestershire sauce, oregano, pepper flakes, cumin and coriander.

Rub the mixture all over the steak and seal the rubbed steak with the mixture in a zip lock bag.

Refrigerate this overnight.

Once done, remove the meat from the bag and now add a little salt and pepper.

Preheat the grill and the oven to 165 degrees C. Now, wrap the tortillas in foil paper and heat in the oven for 15 mins. Remove once warm and store in a casserole to keep warm.

Now, cook the steak over the grill to preference (medium rare or well done). While the steak is cooking, heat the remaining oil in a pan and add the thinly sliced peppers, garlic, salt, pepper and onion and cook until done (15 mins)
Once ready, place the steak and vegetables on a sizzling platter and serve hot, along with the tortillas.
