PREP 2.30 hrs



2 cups black coffee
½ cup marsala
1/3 cup sugar
3 eggs, yolk separate
1 packet of sponge biscuits
Cocoa powder
250g mascarpone
300ml cream


Mix the coffee and the marsala in a dish and set aside.

Now, take the egg yolks and beat them together with the sugar in another bowl until the mixture is thick and smooth.

Add in the mascarpone and cream and mix until thoroughly combined.

Now, in a third bowl, beat the egg whites.

Now, mix the egg whites into the mascarpone mixture.

Take a ceramic dish and dip enough biscuits into the coffee and marsala mixture to cover the entire base of the dish.

Now pour 1/3 of the mascarpone mixture over the biscuits.

Repeat this layer 2 more times and on the top, spoon some whipped cream. Cover the dish with a plastic wrap and refrigerate for 2 hours.

Once chilled and set, dust the top generously with cocoa powder.
