3 garlic cloves
1 piece ginger
1 red bell pepper
1 yellow bell pepper
3 cups cooked rice
2 tablespoons olive oil
3 tablespoons soy sauce
1 teaspoon sesame oil
salt, to taste
1 pinch red pepper flakes (optional)
8 ounces tofu
toasted sesame seeds (optional)
LETS COOK IT UP!
Take a large skillet, heat the olive oil over high heat. Add the finely chopped garlic, ginger and red peppers flakes and stir fry until golden brown (30 seconds).
Cut the tofu into 1 inch cubes and add to the skillet and cook for another 2 mins.
Now add the chopped red and yellow peppers and cook, stirring continuously, for another 3-4 mins.
Add the cooked rice and soy sauce and continue to cook and stir for another 3 mins.
Now, stir in the sesame oil and seeds. Add salt and pepper to taste and garnish with scallions (thinly sliced).
Serve and savor.
