The golden ice cream, almost royal in its manner – Caramel ice cream is a taste not to describe, just to enjoy. We won’t attempt to descript the taste hence. We’ll leave that element for your senses. The appearance, on the other hand, is a lush and luxurious texture that mirrors the royalty of this flavour. There are versions of this one though – some like it salty, some like it sweet, some like it a bit burnt. Our version here picks up all its attractive elements and creates a medley that’s just right. Not limited to any season, but the monsoon is the most popular time for ice-cream. Explore it in your kitchen, serve it up after a meal and create fond memories.
PREP 45 mins plus freezing time
SERVES 5 (5 cups)
2 cups heavy cream
1 cup milk
1 cup granulated sugar
1/4 cup water
3 cups caramel sauce
1 tablespoon vanilla essence
1 teaspoon kosher salt
6 large egg yolks
1 packet vanilla caramel wafer sticks
A handful of mint leaves
LETS COOK IT UP!
Take a large bowl and fill it with ice and water to the halfway mark. Set aside. In another bowl, mix together the cream, milk and vanilla essence. Set aside.
Now, take a large pan and mix together sugar and water and continue to mix until it looks like wet sand.
Place this mixture on heat and let it boil until it looks dark brown in colour (5-7 mins).
Remove from heat and combine the cream mixture by whisking until thoroughly merged.
Keep the pan on minimum heat (just enough for it to stay warm).
Now, take the egg yolks and whisk thoroughly (5 mins). Mix 2 cups of the caramel sauce with the eggs and continue mixing until combined.
Then pour the egg and caramel mixture, along with some salt into the pan on heat for 5-7 mins.
Once done, remove and strain into a bowl. Place this bowl over the ice water bowl for it to cool. Stir occasionally.
Once cooled, place in the fridge to chill for 3-4 hours. Then, freeze according to the instructions of the ice cream maker.
Pour the remaining caramel sauce into an icing bottle. Ice a plate in a random fashion with the caramel sauce. Scoop out and place carefully above the caramel sauce. Garnish with 2 vanilla caramel wafer stick on one side and a few mint leaves on the other. Repeat with each serving.
