PREP 20 mins




5 cups milk (full fat or skimmed)
1 cup heavy cream
8 large eggs
¾ cup cocoa powder (unsweetened)
9 ounces sugar (brown or white)
3 teaspoons vanilla extract
1 cup Nutella


In a saucepan, mix the cocoa powder and 1 cup of milk and whisk together. Add the rest of the milk to this mixture, along with the heavy cream and bring to a simmer, stirring occasionally. Remove from heat.

In a medium sized bowl, whisk the eggs and sugar together. Take less than half of the cream mixture prepared above and mix it in with the milk and sugar.

Now, pour in the remaining cream mixture and place on the gas over low heat. Keep stirring until the mixture has thickened.

Pour the mixture into a large container and let it cool at room temperature for 30-45 minutes.

Once cooled, add the vanilla extract and place uncovered in the refrigerator for 1 hour. Now, cover and store in the refrigerator for 7-8 hours.
