It compliments your tea or coffee perfectly. It’s the most sought after version of dessert bread. It’s yummy on all levels. It’s banana bread with walnuts. Deliciously baked to sweet goodness, with plentiful vanilla flavour and topped off with crunchy walnuts. To please the health buffs, this recipe replaces sugar with brown sugar. In this particular case though, healthier means tastier. Make a loaf and you will boast about your culinary skills for quite a while. Just remember one important tip for this recipe – always use over ripe bananas, the peel should always be brown and the bananas should be slightly brown on the inside too. Ensure this, and you can’t go wrong.

PREP 1 hour 15 mins



1/2 cup butter
1 cup brown sugar
2 cups all-purpose flour
½ cup chopped walnuts
2 eggs
4 very ripe bananas
1 tablespoon vanilla extract
3 teaspoons baking powder
½ teaspoon salt


Preheat the oven to 175 degrees C. Grease a loaf pan lightly and set aside. Now, take a large

mixing bowl, mix the softened butter and sugar until smooth and fluffy. Stir in the beaten

eggs followed by the vanilla and banana. Mix well until completely merged. Set aside. In

another bowl, sift the flour, baking powder and salt together.

Now, blend the banana mixture with the flour mixture and stir until thoroughly combined.

Add the walnuts and pour the batter into the greased pan.

Bake in the preheated oven for 1 hour and to check if ready, insert a toothpick into the

bread and it should come out clean.
