A yummy and simple recipe for the health conscious ones out there who are trying to get into shape.
PREP 20 mins
2 tbs olive oil
2 cups chopped onions
1 cup thinly sliced celery
2 tsps Italian seasoning
salt and pepper
3 cans chicken broth
1 cup diced tomatoes
8 cups mixed fresh vegetables of your choice like carrots, beans, peas etc
LETS COOK IT UP!
In a pressure cooker, take the oil and onions and saute till onions change their color to light brown.
Add the tomatoes and cook further for 3 minutes.
Add the remaining ingredients and let it simmer.
Close the lid and let it cook until 5 whistles.
Remove from heat and serve hot.
