CARROT CAKE WITH CREAM CHEESE FROSTING

This beautiful recipe delivers a dense, moist and delicious carrot cake with creamiest frosting. Can not get enough of this cake.

PREP 60 mins

SERVES 4

INGREDIENTS

3 cups grated carrots
2 cups flour (for a healthy option you could also do wheat)
2 cups white or brown sugar
2 tsps baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
4 eggs
1 1/2 cups vegetable oil (for a healthy option you could also use olive oil)
1 1/4 teaspoons vanilla extract
1  can crushed pineapple with juice
3/4 cup chopped walnuts

FOR THE FROSTING
3 1/2 cups confectioners’ sugar
1 packet cheese
1/2 cup butter, softened
1 1/4 teaspoons vanilla extract

LETS COOK IT UP!

Preheat the oven to 350 degrees C. Grease the baking tray.

Combine all the ingredients for the cake in a bowl except the walnuts. Pour the mixture in the tray and bake for 30 mins.

For the frosting add all the ingredients in a bowl. Beat until smooth.

Add it on the cooled cake.

Top it up with walnuts.
