Try this simple, but smoothest and creamiest recipe of vanilla ice cream.
PREP 2 hours
2 carton double cream
300ml full fat milk
2 cups golden caster sugar
1 vanilla pod
3 large egg yolks
lots of ice cubes
LETS COOK IT UP!
Pour the cream and milk into a pan and add half the sugar. Slit the pod into half and remove the seeds and put it in the mixture. Place the pod after cutting into 3 in the mixture too.
Heat the mixture until it boils and then keep aside for 30 minutes to cool.
Put the egg yolks in a bowl and add the sugar and beat it for 2 minutes. Reheat the cream and add it to the yolk mixture.
Heat the mixture but do not let it boil.
Transfer this to a bowl and place the ice around it so it cools.
Get the ice cream machine running, scoop out the vanilla pod pieces, then slowly pour in the cold custard. Leave it to churn for 10-30 minutes.
Place it in the freezer to get right consistency for 30 minutes.
