QUINOA SALAD WITH TOFU, TOMATO AND CUCUMBER

This refreshing and healthy salad, makes a good meal for work and picnics in the summer.

PREP 20 mins

SERVES 2

INGREDIENTS

1 cup quinoa
3 cups water
Salt to taste
1 cup cooked tofu
2 cups cucumber, diced
1 small onion, finely minced
2 cups finely diced tomatoes
2 tablespoons fresh lime juice
1 tablespoon red wine vinegar
3 tablespoons extra virgin olive oil

LETS COOK IT UP!

In a pressure cooker take some quinoa, water and salt and let it cook till 5 whistles.Let the quinoa cool.

In another bowl combine the remaining ingredients.

Once the quinoa is cooled, add it to the above mix and serve.
