An American inspired rice with some transcendental flavors, that goes really well with beef stew or any other curry. Add some butter and it can be enjoyed by itself.PREP 30 mins
1/2 medium onion,chopped
1 celery, chopped
6 sprigs fresh coriander
6 sprigs flat leaf parsley,
3 large garlic cloves, sliced
2/3 cup water
1/2 tsp salt
1 cup peas
2 tbsp vegetable oil
1 cup rice
LETS COOK IT UP!
In a pan take onion, celery, coriander, parsley and garlic, add 1 1/4 cups water and let it boil till for ten minutes. Remove from the heat, and once its lukewarm then blend in blender along with water.
Return the broth to the pan and simmer the peas in salted water.
Take the rice and fry it along with oil in a separate pan.
Add the peas to the rice and then the broth. Let it cook for 15 minutes.
Garnish with coriander and parsley.
