VEGETABLE SAMOSA

A mouth watering recipe, straight from the Indian cuisine, for a fried indulgence.

PREP 30 mins

SERVES 5

INGREDIENTS

FOR THE FILLING

1 Potato, boiled and chopped
1 carrot chopped
2 cloves of crushed garlic
1 Onion, chopped
1 cup of  peas
1 tbsp vegetable oil
2 tsp spices according to taste
Salt, Pepper to taste.
100ml of vegetable stock.

MAKING THE SAMOSA PASTRY

225gm. plain flour
2 tsp salt
2 tbsp oil
warm water to knead

Oil to fry

LETS COOK IT UP!

Take the oil and add the onions and garlic and cook for 2 minutes. Add all the vegetable and spices for the fillings and salt and pepper. Add the vegetable stock and cook for 10 minutes.

To make the pastry, mix the flour, salt and add the oil. Using the water knead the dough.

Roll out the pastry dough in a thin square sheet on a platform and cut into 12 equal pieces.

Dampen the ends of the sheets with water and place the filling in the center, rolling the dough and sealing the ends.

Deep fry the samosas and serve with a sauce or chutney of your choice.
