RASPBERRY PANCAKES

Add a quick and healthy start to breakfast with these mouth watering pancake recipes.

SERVES 12

INGREDIENTS

1 1/2 cups milk
1 egg
2 tsp vanilla extract
2 cups flour
1/4 tsp baking soda
1/3 cup sugar
25g melted butter
1 1/2 cups fresh raspberries

DIRECTIONS

Take the fresh raspberries and make a puree. Combine the remaining ingredients except the butter in a bowl and whisk together.

In a large non-stick frying pan add some butter and heat. Using 1/4 cup mixture per pancake, cook 2 pancakes for 3 to 4 minutes or until bubbles appear on surface. Turn and cook until cooked through.

Repeat with remaining batter and serve.
