CHOCOLATE SOY PUDDING

A lovely dairy free pudding, that is not only delicious put also vegan. 

PREP 45 mins

SERVES 4

INGREDIENTS

3 tablespoons cornstarch
2 tablespoons water
cups soy milk
1/4 tsp vanilla extract
1/4 cup white sugar
1/4 cup cocoa powder
a bowl of chopped hazelnuts
saffron for garnish
few pieces of mango (optional)

LETS COOK IT UP!

In a bowl take some water and corn starch and mix until a smooth paste is formed.

Add all the ingredients in a pan and cook on medium heat, including the corn starch. Continue stirring until the mixture boils and then thickens.

Remove from heat. Set aside for 5 minutes and refrigerate.

Add chopped hazel nuts as a garnish. Place a piece of mango on top if you want to add some fruit to it. Garnish with saffron.
