Rich, buttery and creamy cupcakes along with the fresh mangoes makes this one sinful dessert.
PREP 30 MINS
1 & ⅓ cup all-purpose flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup melted butter
1 cup sugar
¼ cup coconut flavored yogurt
¾ cup milk
1 tsp vanilla
ingredients for the butter cream
¾ cup butter
1 cup of mangoes
¼ tsp salt
½ tsp vanilla extract
4 cups icing sugar
LET COOK IT UP!
Line the muffin pan with paper liners.
Preheat the oven to 350 degrees C
In a bowl mix the flour, baking soda and powder and salt.
In another bowl add the butter and the sugar and mix well. The add all the other ingredients and mix well.
Add this mixture to the dry ingredients above and mix well. Fill ¾th of the muffin trays. And bake for 18 to 20 minutes. Let them cool.
FOR THE BUTTER CREAM
Take half the mangoes and blend them to make a puree.
In a bowl whisk the butter well. Add to it the mango puree and all the ingredients except the icing sugar and remaining mangoes and mix well. Then add the icing sugar one cup at a time and mix well to get a good consistency.
Place the butter cream on the cooled cupcakes and top them up with the remaining mangoes.
