An Italian frozen dessert, which literally means “water ice”. A yummy, hassle free dessert to beat the summer heat. You can refrigerate it and have it over a number of days. The apricots give it a tasty and healthy twist to the dessert, since its also low on calories. You could also mix and match it with your other fruits or maybe add some cream on top before serving.
PREP: 5 minutes
12 fresh ripe apricots, pitted and squared,
1/2 cup superfine sugar
1 1/2 cup cold water
2 tsp lemon juice
salt to taste
1/4 tsp almond extract mint leaves
LETS COOK IT UP!
Combine all the above ingredients in a blender except the cream.
Place the mix in a baking tray and freeze for one and half hours. Remove the mix every 45 minutes and with a fork mix it vigorously till its frozen.
Once frozen place it in glasses by scraping the granita with a fork, creating fluffy ice crystals. Place mint leaves on top and serve.
